Bao bun with caramelised pancetta and BBQ sauce

INGREDIENTS

3 Βao Βuns

600g Boneless pancetta

15g Sweet and Smokey Meat Rub (Art. 51009)

30g Smokey BBQ Marinade (Art. 50625)

60g Mayonnaise (Art. 55085)

60g BBQ Kentucky Bourbon (Art. 50608)

Red cabbage

A few coriander leaves

IMPLEMENTATION

  1. Mix the pancetta with the Sweet & Smokey Meat Rub and the Smokey BBQ Marinade. Leave it in the fridge for at least 4 hours.
  2. Cook the meat in the oven at 180°C for about 25 minutes. Let it cool down and cut it into pieces.
  3. Spread a little Mayonnaise on the one side of the bao bun and a little BBQ Kentucky Bourbon sauce on the other, add meat, red cabbage and coriander.
